Plant-Based Smash Burger

Plant-based ground products are designed to brown and sizzle like beef, which makes them a natural fit for the smash technique. Pressing small balls flat onto a very hot surface creates lots of crispy, lacy edges, and the thin patties cook in just a few minutes.

Because these products contain fat and binders, they behave a lot like 80/20 beef, but they can stick more, so a well-oiled, very hot griddle and a sturdy spatula help. Use vegan cheese and sauce if you want the burgers fully plant-based.

Instructions

  1. Make the sauce. Stir together the mayo, ketchup, relish and mustard. Set aside.
  2. Portion the "meat." Divide the cold plant-based ground into 8 balls of about 2 oz (55 g) each. Keep them in the fridge until the pan is hot.
  3. Toast the buns. Butter the cut sides of the buns and toast on the griddle or skillet until golden. Set aside.
  4. Heat the griddle. Heat a cast-iron skillet or flat-top griddle over high heat until very hot, then add a thin film of oil.
  5. Smash. Place 2 to 4 balls on the griddle, leaving plenty of space. Cover each with a square of parchment and press firmly with a sturdy spatula or burger press until about ¼ inch thick. Peel off the parchment and season with salt and pepper.
  6. Sear and flip. Cook 2 to 3 minutes, until the edges are deeply browned and crispy. Scrape under each patty with the spatula and flip.
  7. Add cheese and finish. Add a slice of cheese to half the patties and stack the plain patties on top. Cook 1 to 2 minutes more, until the cheese melts. Many brands recommend cooking to an internal temperature of 165°F (74°C), so follow your package directions.
  8. Assemble. Spread sauce on the buns, add the double patties, onion and pickles, and serve right away.

Tips for Success

  • Keep it cold. Plant-based ground softens fast at room temperature and gets sticky; cold portions smash cleanly.
  • Use parchment. A small square between the spatula and the patty stops sticking during the smash.
  • Scrape, don't lift. Get the edge of your spatula under the crust and scrape to keep all the crispy bits attached.
  • Read the label. Cooking directions vary by brand, so check the package for recommended temperatures and storage times. More smash basics are in our ultimate smash burger recipe.
