Two simple steps make oven fries properly crispy: soaking the cut potatoes to remove surface starch, and drying them thoroughly before they hit a hot pan.
Instructions
- Cut. Cut the potatoes into ¼-inch sticks; there's no need to peel.
- Soak. Soak in cold water for 30 minutes.
- Heat the oven. Heat to 450°F with a large baking sheet inside.
- Dry and coat. Drain and pat completely dry. Toss with the cornstarch, then the oil, salt and garlic powder.
- Bake. Spread in a single layer on the hot pan, leaving space between fries. Bake for 15 minutes, flip, then bake 10 to 15 minutes more until deep golden.
- Finish with a pinch of salt and serve immediately.
Tips for Success
- Use two pans if they don't fit in a single layer. Crowded fries steam instead of crisp.
- Serve with our Easy Burger Sauce.
