How to eat burgers in New Haven

New Haven is famous for pizza, but it also has one of the most important places in American burger history. Louis' Lunch, which traces its story to 1895, is credited by the Library of Congress as the home of the hamburger sandwich, and it still serves its burgers the old way. Around it, you will find gastropubs, neighborhood bars and a steakhouse that all take burgers seriously.

Most visitors stay downtown, around the Green and Yale's campus, where Louis' Lunch, Prime 16 and Ordinary are all within walking distance. State Street runs north through East Rock, with a string of bars and restaurants. Whalley Avenue heads west toward Westville, and Whitney Avenue continues north into Hamden. Every spot below appears on the cards above, and you can browse more cities in our restaurant directory.

Best burgers in New Haven by style

The original

Louis' Lunch is the essential stop. The family-run shop on Crown Street cooks one burger, made from a blend of fresh-ground beef, on vertical cast-iron broilers that date to 1898, and serves it on white toast with optional cheese, onion and tomato. There is no ketchup and no fries. If you want to understand its place in history, our guide to who invented the hamburger covers the competing claims.

Gastropubs and burger bars

Prime 16 on Temple Street has focused on Angus burgers and craft beer since 2008, with house-made sauces and a long specialty menu. Ordinary on Chapel Street is a cocktail bar where burgers share the menu with sandwiches. For more chef-driven burgers around the country, see our best gourmet burgers page.

Neighborhood bars and pubs

Christopher Martins is a longtime East Rock pub with a loyal following, and New West Cafe on Whalley Avenue is a low-key bar for a simple burger. Just over the line in Hamden, Eli's on Whitney has a giant horseshoe bar and a menu that covers burgers, steaks and seafood. Our best classic burgers page has more spots in this style.

Steakhouse burgers

Cast Iron Chef Chop House and Oyster Bar on State Street is the dressiest option here, a steakhouse and oyster bar where the burger is a good choice for anyone not ordering a steak.

Local burger traditions

New Haven's burger tradition starts and ends with Louis' Lunch. The shop's rules are part of the experience: burgers come on toast instead of a bun, the only toppings are cheese, onion and tomato, and condiments like ketchup are not offered. Cooking the patty upright in an antique gas broiler is very different from a flat-top griddle or a backyard grill.

That approach is a useful reminder of how much the cooking method shapes a burger. If you want to experiment at home, our guide to American burger styles explains how different methods change the result, and our guide to juicy burgers covers the basics.

Tips for visiting

  • Plan around Louis' Lunch. It keeps limited hours, closes some days of the week and traditionally takes a break in August, so check before you go.
  • Do not ask for ketchup at Louis' Lunch. Order your burger with cheese, onion and tomato, or plain.
  • Walk downtown. Louis' Lunch, Prime 16 and Ordinary are all close to the Green and Yale, so you can visit on foot.
  • Head up State Street for pubs. Christopher Martins and Cast Iron Chef are both on State Street.
  • Cooking at home? Our burger temperature and doneness guide covers the USDA-recommended 160°F for ground beef.
